My isreali-inspired chop salad is the perfect recipe if you want something SUPER HEALTHY! and you've got your hands on a few different kinds of veggies. There are a few ingredients that tie the salad together, but even those are up to the eyes, nose and taste buds of the dish-creator. So use your creativity and whatever you've got in the fridge or the garden. And of course, the most important ingredient, Love and Happy Thoughts.
So, prepare the following with only Good Thoughts In Mind:
Ingredients (serves 4):
handful of Greens: Lettuce, spinach, kale, chard, sorrel, etc.
2 persian cucumbers
1 med tomato
1 small red onion
whatever else you've got: carrots, beets, mushrooms, apples, grapes zucchini, peas, corn, beans, etc
a handful of sprouts: lentil, chickpea, sunflower, broccoli, alfalfa, mung bean, whatever you got
Possible Crunchy bits:
nuts: raw walnuts, pecans, pine nuts, brazil nuts or almonds, in pieces
seeds: sunflower, pepitas, sesame - toast 'em dry in a pan for more crunch!
1/4 cup olive oil or coconut oil
salt and pepper to taste
1tbsp your choice of vinegar (optional)
You can choose to add everything raw, but i like to steam or lightly sautee' (in coconut oil) some of my veggies first, including the broccoli, cauliflower, swiss chard (silverbeet), kale, etc. As mentioned earlier, I also like to toast my seeds lightly on a dry pan to give another texture to my salad.
Cut everything into small (~1cm, don't go running for your ruler) chunks, except the beet(root) which is best grated.
I will post about how to sprout soon, if you don't already know how. It's easy and one of the cheapest access to jam-packed nutrients.
Mix all veggies and crunchy bits together and admire the rainbow of your handiwork.
Add olive oil, vinegar, and salt and pepper to taste.
